Magnificent light and airy pate a choux pastry filled with luscious custard and drenched with chocolate icing. We make our eclair shells from scratch from a French paste called pate a choux. Choux paste contains only butter, water, flour and eggs. The high moisture content in the paste creates steam which puffs up the inside of the dough to create an airy, tender shell.
